    INGREDIENTS:

    1 to 1-1/2 cups chopped ham
    1 cup finely chopped onion
    1/2 teaspoon hot pepper sauce
    2 Tablespoons vegetable oil
    2 (15-ounce) cans black-eyed peas, heated
    3 cups cooked rice
    1/2 teaspoon salt

    TO PREPARE:
    Saut?the chopped ham, onion and hot pepper sauce in the vegetable oil in a saucepan over medium heat for 3 to 5 minutes or until the onion is soft but not brown. Stir in the undrained black-eyed peas and rice. Cook over medium heat until heated through. Season with salt. Garnish with thinly sliced ham.
